"Soufra" is one of those rare documentaries that received a 100% rating on Rotten Tomatoes, a story of resilience, perseverance, and the power of women to create positive change for themselves and their communities. Led and inspired by Mariam Shaar, a generational refugee who has spent her whole life in the Burj Al-Barajneh refugee camp south of Beirut, Palestinian, Iraqi, and Syrian refugee women come together to overcome a system that deprives them of the right to work, heal the wounds of war and statelessness, and make their dream of a catering business and a food truck a reality. The film follows Mariam as she sets out against all odds to change her fate by launching a successful catering company, “Soufra,” (a long table with many good things to eat!) and then expand it into a food truck business with a diverse team of fellow refugee woman who now share this camp as their home. An inspiring and delicious tale of hope, friendship, and the unifying power of food that comes with its own cookbook, too! We want to thank the University at Buffalo Humanities Institute for its generous sponsorship of the screening of "Soufra".
